The rugged cast-iron doufeu from Le Creuset has a surprise: the top of its lid is recessed in order to hold ice cubes. As a roast beef or chicken bakes inside the doufeu, hot steam hits the cold lid and condensation forms. Textured with dimples, the underside of the lid drips the moisture back into the pot for basting, resulting in rich, flavorful juices and very tender meat. You may need to replenish the ice cubes as baking progresses.
